And you thought you’d never get to bring a sammich for lunch again?
I made this with double fiber bread (I need the fiber) but you can make it with whole wheat. Make sure you check the ingredients and it’s vegan.
I put some sun dried tomato paste on the bread, some Daiya cheese on top, and 2 slices of vegan tofurky bologna (found at groceries store).
I toasted everything in the toaster, put both halfs together and ate it. It was delicious.
You can pair it with a side salad, fries, potato chips, hummus and pita chips, whatever you’d like.
You can also add some avocado slices, guacamole, tomatos, lettuce, onions, ketchup, mustard or any other topping you’d like!
