Alright, I’m not going to pretend I cooked the roasted egg plant. We bought chinese food and this was on their menu. For leftovers I had it with some Daiya cheese (everything is better with cheese), leftover white rice, lettuce, and a half avocado. I added some salt to the avocado and some ginger dressing over the whole thing (I love the ginger dressing). Dinner was phenomenal!!
