Avocado, Toast, and Strawberry Breakfast

Well as the title said it, I had a half avocado, some sliced strawberries, and one slice of toast with vegan butter and some jelly.

Simple, delicious, and nutritious.




The Daily Bread

Today for lunch we went to The Daily Bread, a Mediterranean place in a food court of one of our malls. Not fancy, inexpensive, but very yummy.

I had the Falafel Platter, which comes with 4 falafel balls, a pita bread cut into 4 pieces, and 2 sides. For my sides, I had the lentils with rice and the taboule salad. My boyfriend had the Falafel Platter but he had the hummus and the tabule salad. He also had some fries with his order.

All in all it was very delicious.




Vegan Chocolate Chip Cookies

I love that site! They have awesome vegan recipes and they’re all very easy to make. Even though I started with the original recipe, I have added a few ingredients of my own. This is my edited recipe.

The batch you see in the pictures is half this recipe.

Preheat to 350 degrees.

For the full batch – about 6-10 cookies, you’ll need:

– 1 c brown sugar (I use light brown but you can also dark)

– ¼ c Agave Grade A Dark Amber Maple Syrup

– ½ c of coconut oil or grape seed oil

– ¼ c sweetened or unsweetened applesauce (I have found it makes no difference)

– 1 tsp vanilla

– 2 c of whole wheat or all purpose flour (whatever your preference)

– ½ tsp baking soda or baking powder (either will work)

– ½ tsp salt

– dash nutmeg

– Chocolate chips – I bought vegan chocolate chip cookies at my neighbor whole foods.

– Butter flavor pan greaser (It’s actually vegan)

  1. In a large bowl, beat together sugar, syrup, and oil. Beat together. It will become kind of grainy and that’s OK.
  2. Beat in vanilla and applesauce.
  3. In a separate bowl, sift together flour, soda, salt, and nutmeg.
  4. Add dry mixture to wet; mix well.
  5. Fold in chocolate chips.
  6. Form into 1″ balls (or whatever size you prefer) and bake on greased sheets at 350 degrees for 6-10 minutes.

It took me many tries to get them right, so don’t be discouraged. It helps to flatten the dough when you’re placing it on the baking sheet for a thinner cookie. Don’t fret! Let me know if you need advice!!!












Gardein, Refried Bean, Avocado Salad, and Rice Lunch

Today I had a really great lunch!

I started with a Gardein Chipotle Black Bean Burger, it is made with black bean, corn, and other veggies, lettuce, avocado, refried beans, and white rice.

Most of the things that I make do not require actual cooking, no one has time for that. I opened a can of refried beans, I used instant rice, I heated the veggie patty, and I had an avocado I peeled and added. I also added some Daiya cheese to the salad and some (you guessed it!) ginger dressing. It was really good!

Sweet Potato Baked Dish and Gardein Chick’n

You’ll need for 2 people:

– 1 sweet potato

– 1/2 chopped onion

– Canned beets

– Canned cut carrots

– 2 tbs Olive oil

– Salt to taste

– Some minced garlic to taste

– I added some mushrooms. I like mushrooms.

Go ahead and mix everything together in a baking pan and bake at 400 degrees for 50 minutes.

The chik’n comes frozen, so go ahead and stove top cook it in some olive oil until fully cooked.

General Tso Bean Curd

We order chinese place from a local chinese restaurant and they have very delicious tofu. We usually order the General Tso Bean Curd. The sauce is sweet and tangy, the broccoli is fresh, and the rice is great with it. We also got the spring vegetable rolls but I didn’t take a picture of them. Always remember to look at the vegetarian section of the chinese food menu and request tofu instead of chicken. Sometimes they do it, sometimes you have to insist, and sometimes you have to go with what they have…but there will always be something to eat!
