Tonight I had the Amy’s Organic Lentil Soup with some white rice and a banana.
Amy’s Soups never disappoint me. The soups are always delicious and do not taste canned at all. They are seasoned with onions, tomatoes, potatoes, peppers, and other spices. The rice is instant made and the banana was just perfect.
Yes! You read right! Coconut shrimp. Totally vegan and totally delicious. A brand called Sophie’s Kitchen specializes in making vegan “sea food”. They have shrimp, fish filets, breaded shrimp and all sorts of other yummy food.
To make the shrimp, follow the recipe in the back of the carton. It’s very easy, just pan fry the shrimp in olive oil.
Kimchi is Korean marinaded Cabbage. It’s very good and a little spicy. You can pair this up with tofu or shrimp or any other protein.
The sweet potato I made in the microwave on “baked potato setting”. I added vegan butter and some brown sugar.
I hope you enjoy!
I tried LightLife Gimmy Lean Ground Beef Style Sausage and I must say I am impressed. I haven’t tasted animal sausage in about six years but this really reminds me of the taste. It comes mushed together so you have to build the size of the patty but it’s very easy. Then you pan fry it for a few minutes with some olive oil, and voila! You’ve got sausages!
I have to say it’s very yummy!
I have not had good luck with many protein shakes. They either taste horrible or they are expensive. I am trying Alive! Pea Protein. It’s actually not that bad. If you mix it alone it tastes like vegetables. However, I added some berries, a banana, and some splenda and it tasted really good! No after taste either.
I highly recommend it!
We had a hot dog night! Bet you didn’t think you could enjoy hot dogs as a vegan huh!?
I like to buy Smart Dogs – fully vegan and you won’t even know it!
Boil the hot dogs – Boil water and place the hotdogs in the water for 2-3 minutes, then take them out.
You can buy whatever type of bread you want and whatever toppings you want!
You can have vegan chili, hummus, ketchup, mustard, vegan mayo, tomatoes, crunchy chips, onions, jams, anything you want!
Tonight we made a full chinese dinner!
Turn on the oven and follow the instruction for the type of spring rolls you bought. Any brand will do fine as long they’re SPRING rolls and not egg rolls. Big difference.
I started with cubed firm tofu, Simply Asia General Tso stir fry sauce, broccoli, and frozen spring rolls.
In a medium pan with some oil put the tofu to cook. After a few minutes add the General Tso sauce and let it cook.
Let it simmer until the tofu is cooked and add the broccoli to cook on top of the tofu.
You can make some white rice to go along with it. It was delicious!
Today for lunch I made some tofu stir fry.
I started with chopped onions and tomatoes in some olive oil.
I added asparagus, broccoli, mushrooms, cubed extra firm tofu, and soy sauce.
Let it all stir fry, add some rice, and enjoy!
