Teriyake Chick’n Strips

I made some delicious teriyaki chick’n strips from Gardein. Their stuff is so good!

I paired it with some black beans, lettuce, and ripe plantains.

Follow the directions on the bag for the chick’n, very simple, just stir fry it and add the sauce that comes with it.

The maduros, I found at my local grocery store. Just microwave those and that’s it!

Super simple! Enjoy!

Latin Bean Soup & Avocado

Well today I decided to make some bean soup, like my abuela would make…without the pressure cooker.

You’ll need:

– 1 can of black beans

– Chopped onion and tomato

– Spices (adobo, basil, oregano)

– Cubed boiled potatoes

– A bit of Olive Oil

– Avocado (1/2 or whole)

1. In the pan, cook the tomatoes and onions with the olive oil and spices

2. Once that’s cooked, add the beans and potatoes

3. Let it simmer and serve!

4. Add the avocado on top or on the side

– You can add some rice for a real latin meal!

Panera Bread

Yummers!

They have A LOT of vegetarian options (with cheese) and SOME vegan options (with some modifications). We went for a light dinner and I had their Berry Salad (no chicken) and it was phenomenal! So much better than I expected! I added some avocado (Of course). I also had their mozzarella and sun dried tomato panini (no cheese, add avocado) and it was DELICIOUS! I love this place!

You can also have some black beans, salads, their veggie sandwich (no cheese) and COFFEE!!

They offer FREE (as opposed to Starbucks’ .60 cents up charge) for soy milk!

Hint: Get their panera card! You get free stuff!!

Gardein, Refried Bean, Avocado Salad, and Rice Lunch

Today I had a really great lunch!

I started with a Gardein Chipotle Black Bean Burger, it is made with black bean, corn, and other veggies, lettuce, avocado, refried beans, and white rice.

Most of the things that I make do not require actual cooking, no one has time for that. I opened a can of refried beans, I used instant rice, I heated the veggie patty, and I had an avocado I peeled and added. I also added some Daiya cheese to the salad and some (you guessed it!) ginger dressing. It was really good!

Mexican Food and Taco Bell

Mexican food is great! Especially if you’re a vegan. There are so many choices to choose from and they’re all delicious.

Salsa? Check

Beans? Check

Guacamole? Check

Chips? Check

Tortillas? Most tortilla are just corn and water…so check!

I like to put some beans, lettuce, tomatos, and avocado slices or guacamole in my burritos. Very yummy!

Hold the meat and cheese. It will still taste delicious but without the added calories and without the added yucky meat. Funny enough, taco bell will be extremely¬†accommodating. It is the vegan’s fast food. Their Veggie Cantina Bowl can be made vegan – just hold the cilantro sauce, which might have some dairy. It tastes phenomenal! Their guacamole is great too! You can replace beans for anything! You like their tacos? replace beans for meat, you like their gordita crunch? no meat just beans and beans between the tacos. It really makes your hectic days a lot easier to handle!
