I made some delicious teriyaki chick’n strips from Gardein. Their stuff is so good!
I paired it with some black beans, lettuce, and ripe plantains.
Follow the directions on the bag for the chick’n, very simple, just stir fry it and add the sauce that comes with it.
The maduros, I found at my local grocery store. Just microwave those and that’s it!
Super simple! Enjoy!

Noodles: These are all tofu noodles, no wheat. They are already prepared so no big hassle cooking them.
In a small pan, cook on medium some marinera sauce with diced tomatoes and garlic. After rinsing the noodles with water, add the noodles and let it all simmer. When done, top off with some Daiya Cheese.
Sweet Potato: After rinsing the potato, put it in the microwave at “baked potato” setting. When it’s done, peel and mush the potato. Add vegan butter and brown sugar.
Chick’n: Gardein chick’n is the best! Cook in a pan at medium fire until done.
Today I made vegan pancakes!
I followed the recipe in the back of the pancake mix…but I added a twist!
1c of Pancake mix
1 tbs of flaxseed meal (It’ll be your egg replacement)
3/4c of coconut milk
1tbs of coconut oil
3 tbs of water
This will yield about 3-4 thin pancakes or 2 real thick ones
Start by mixing the flaxseed meal and the water – Let it sit for 2 minutes
While that’s sitting, mix everything else and then add the flaxseed
Beat it manually with a fork until it’s the right consistency
Put it on a pan at medium heat and let it cook, flipping it in order to cook both sides
Add syrup and enjoy!
Disclaimer: This is not going to taste like IHOP’s pancakes, be realistic! They will taste delicious though and how long has it been since you had chocolate chip pancakes anyway?
Chocolate Chip Pancake – Add 1/2 tbs of cocoa powder and a handful of chocolate chips.
Blueberry Pancake – Add a handful of blueberries.
I tried LightLife Gimmy Lean Ground Beef Style Sausage and I must say I am impressed. I haven’t tasted animal sausage in about six years but this really reminds me of the taste. It comes mushed together so you have to build the size of the patty but it’s very easy. Then you pan fry it for a few minutes with some olive oil, and voila! You’ve got sausages!
I have to say it’s very yummy!
Tonight we made a full chinese dinner!
Turn on the oven and follow the instruction for the type of spring rolls you bought. Any brand will do fine as long they’re SPRING rolls and not egg rolls. Big difference.
I started with cubed firm tofu, Simply Asia General Tso stir fry sauce, broccoli, and frozen spring rolls.
In a medium pan with some oil put the tofu to cook. After a few minutes add the General Tso sauce and let it cook.
Let it simmer until the tofu is cooked and add the broccoli to cook on top of the tofu.
You can make some white rice to go along with it. It was delicious!
I made a sweet baked potato today for dinner. I bought a regular sweet potato at the store, no need to buy the expensive ones “intended” for baking.
I put the potato in the microwave on a plate and push the “potato” button. After 4-5 minutes, I had myself a baked potato!
I added some brown sugar and some vegan butter and I had a delicious and nutritious dinner.
Before I became a vegan I LOOOOVED Reese’s Peanut Butter Cup but even the dark chocolate ones have milk (booo!) so I decided to make some of my own.
I started with very dark vegan chocolate (check the ingredients!) and some peanut butter.
I used a small cupcake pan and used aluminum foil for the filling.
I melted the chocolate in the microwave. I scooped little spoonfuls of peanut butter and placed them in the middle of the cup and then I added the chocolate.
Refrigerate it for a bit and voila! Chocolate peanut butter cups!
