Mandarin Orange Crispy Chick’n Meal

Tonight we had Gardein Mandarin Orange Crispy Chick’n with some Kale salad, and hummus.

YUM!

You can find this brand in the meat frozen isle. It’s very easy to make. The meal comes with a little pouch with the sauce and you just cook it with the chick’n. Then I added some raw kale with some salad dressing and hummus. Dinner in minutes.

Fruit Smoothies

I have decided to try some fruit smoothies with the added Alive nutritional shake.

I have created several recipes with fruits and vegetables based on some I’ve seen at fruit smoothie places and also my own.

This one is:

– 8oz of water/coconut water/coconut milk

– handful of kale

– A scoop of Alive pea protein

– Mango slices

– Half an orange

– A banana

Blend it, add some splenda if you wish and enjoy!

 

This one has:

– Some pineapple slices

– A handful of dates

Blend it, add some splenda if you wish and enjoy!

 

You can create any mix of fruits and vegetables for your smoothies. I have found that dates will naturally sweeten the smoothie and banana will cover up some of the after taste of the protein shake.

Here are some ideas: Bananas, apples, strawberries, spinach, dates, kale, blueberries, blackberries, oranges, mangos, etc…The possibilities are endless!

Amy’s Organic Lentil Soup, Rice, and a Banana

Tonight I had the Amy’s Organic Lentil Soup with some white rice and a banana.

Amy’s Soups never disappoint me. The soups are always delicious and do not taste canned at all. They are seasoned with onions, tomatoes, potatoes, peppers, and other spices. The rice is instant made and the banana was just perfect.

Seiten – Gluten Meat Alternative

Seiten is a wheat gluten meat alternative. So if you’re sensitive to gluten or wheat, stay away from this! If you’re not then come on in and enjoy the eats!

I like to find this product at my local oriental store. You should venture to one, they have great vegan stuff! They have vegetarian curry chicken, sweet and sour vegetarian chicken, tofu, and all sorts of sauces.

What I made here was the vegetarian curry chicken but I cooked it on some soy and teriyaki sauce. This sauce is super tasty! You can add it to any dish and it will really make the food taste good!!

You can find the seiten mostly at oriental stores but the sauce, you can find anywhere.

SUPER SIMPLE Vegan Apple Pie

I love apple pie but all the store bought ones have dairy. Forget them! This apple pie will make you wonder why we would ever need to put dairy on anything ever again!

What you’ll need:

– 6 cored, peeled, and thinly sliced/chopped apples (I use red apples because I like it sweet but you can use green apples for a more tart taste or a you can use a combination)

– 1 tbs of powder cinnamon

– 1 tbs of vanilla extract

– 1 cup of Splenda

– 1/3 cup of brown sugar

– 1/2 tbs of nutmeg

– 1/2 cup of apple pie crisp (optional)

– 1 tbs vegan butter (optional) – you can find this at your local grocery store

– 1 ready made pie crust (check the ingredients but they’re usually vegan!)

**Preheat oven to 350 degrees**

1. Core, peel, and thinly slice/chop the apples and put them in a bowl.

2. On a separate bowl mix in the splenda, brown sugar, nutmeg, cinnamon, vanilla extract, and vegan butter. Mix it well so that everything is combined.

3. Add apples to the mix and stir well so that everything is covered in the sugar mix. Don’t skip out on this step! Make sure your apple slices are all covered in the sugar mix!

4. Add the apples to the pie crust.

5. If you decided to go for the apple crusts, add that to the top of the apples.

6. Bake for 50 minutes at 350 degrees.

7. Let it cool down and ENJOY!!!

Chik’n, asparagus, and rice dinner

If you’re looking for a meat replacement, I have found that Gardein has the best tasting ones. Don’t get too excited though! Some of their meat replacements have dairy in them, so if you’re a vegetarian, go nuts! but if you’re a vegan then slow down and read the ingredient list. This particular chik’n is vegan and tastes amazing! I cooked it with some olive oil, italian seasoning and I added some salt but you can most definitely add your own seasoning! The type of chik’n is supposed to be cooked with a marinera sauce, which is why it’s kind of red, and the sauce comes with the package so all you gotta do is open it and cook it.

I also made the asparagus with some olive oil, italian seasoning, and salt. The secret is to let the asparagus cook enough where it is soft and it tastes like the seasoning. The white rice is instant made white rice. I would have gotten brown rice but I got this box of instant rice at a whole sale type of place and they only had white rice. I added some soy sauce for flavor.

I finished it with a fruit popsicle! (see the ice cream blog) It was a really good meal!

Butter

So you really like butter and the way it makes the food taste. Well while your arteries are getting clogged and your heart is trying to keep up, there are better alternatives.

You can try smart balance or earth balance. They cook like butter and are spreadable like butter but without all the animal stuff in it! You can probably get it at your local supermarket!
