Hello Everyone! I know I have been MIA lately. But here is an awesome recipe I made today. SO YUMMY!
What you’ll need (if you can get everything organic, even better):
1 1/5 cups of your favorite tomato pasta sauce (I like a mushroom sauce)
1 cup Daiya cheese shreds (I used cheddar style)
Salt and pepper to taste
A little bit of Coconut oil (or olive oil)
Pre-heat over at 425 degrees
1. Slice the eggplant and sauté the eggplant in the coconut oil until the eggplant cooks a little bit
2. Chop the carrot and cucumber
3. In a small baking pan, add the sauteed eggplant, carrot, and cucumber. Mix in the sauce and add the cheese on top.
4. Bake at 425 degrees for about 20-25 minutes
5. Enjoy! Makes about 4 portions.
Since I’m logging all my food I can tell you the nutritional facts…you’ll be amazed at how many calories in each serving….
1 serving has 179 calories!! (Might fluctuate based on the tomato sauce you used)
I had a 1/2 cup spinach with a bit of low cal dressing and 1/2 avocado.
This restaurant is in Miami, Florida. Not sure if anywhere else. However, the tips on making a vegan meal in a pizza/pasta place can be used anywhere.
One of my boyfriend’s favorite restaurants! Very delicious food, including the pizza, that I used to eat when I was a vegetarian and not a vegan. Once I made the transition, I had to look for something else to eat here. I have found that with a little creativity and willingness from the server, anything is possible.
An easy meal at pizza/pasta restaurants is to order pasta. Simple spagetti with marinera, then add some mushrooms or eggplant.
Another options, which is the more creative one, is to choose a sandwich or panini and re-create it. Today I ordered a lunch combo with a salad and a panini. If you explain to the waiter that you don’t eat meat or animal products, they are more willing to work with you. I told her I wanted a panini with caramelized onions, mushrooms, eggplant, tomato, and lettuce and if I could have it with some pizza tomato sauce. What came out was a great unique vegan panini!
They also have an eggplant parmesan sandwich, which would be ok, except the eggplant is breaded with egg. So no to that one.
For the appetizer, we order the potato chips. These are handcut, homemade, seasoned potato chips. They come with a sauce that is mayo based (my boyfriend is obsessed with this sauce) but I eat them with ketchup.
Always remember to ask for what you want and re-create meals that you want to make vegan. Most often than not, they’ll do it!
Alright, I’m not going to pretend I cooked the roasted egg plant. We bought chinese food and this was on their menu. For leftovers I had it with some Daiya cheese (everything is better with cheese), leftover white rice, lettuce, and a half avocado. I added some salt to the avocado and some ginger dressing over the whole thing (I love the ginger dressing). Dinner was phenomenal!!
