Teriyake Chick’n Strips

I made some delicious teriyaki chick’n strips from Gardein. Their stuff is so good!

I paired it with some black beans, lettuce, and ripe plantains.

Follow the directions on the bag for the chick’n, very simple, just stir fry it and add the sauce that comes with it.

The maduros, I found at my local grocery store. Just microwave those and that’s it!

Latin Food Restaurant

Coming from a hispanic background, everything that has to do with latin food, also has to do with meat. Well, with a little bit if creativity and by asking some questions, it doesn’t have to be that way.

When we go into latin restaurants, I immediately go to the ‘sides’ section and start looking at those. You might find a side salad, plantains, yuca, black beans (usually made vegan but ask if it was cooked with meat), rice, bread, etc. My usual meal is black beans, rice, and plantains.

We also went to a fast latin food restaurant called ‘Pollo Tropical’ which literally means Tropical Chicken, but don’t let the name fool you! They have a vegetarian dish. You can choose between rice, rice and beans, yellow rice, rice and lettuce, with corn, grilled onions, tomatoes, and grilled peppers. They also have some yummy sauces such as guava bbq. If you have one near your house, you should check it out!








And you thought you’d never get to bring a sammich for lunch again?

I made this with double fiber bread (I need the fiber) but you can make it with whole wheat. Make sure you check the ingredients and it’s vegan.

I put some sun dried tomato paste on the bread, some Daiya cheese on top, and 2 slices of vegan tofurky bologna (found at groceries store).

I toasted everything in the toaster, put both halfs together and ate it. It was delicious.

You can pair it with a side salad, fries, potato chips, hummus and pita chips, whatever you’d like.

You can also add some avocado slices, guacamole, tomatos, lettuce, onions, ketchup, mustard or any other topping you’d like!




Mexican Food and Taco Bell

Mexican food is great! Especially if you’re a vegan. There are so many choices to choose from and they’re all delicious.

Salsa? Check

Beans? Check

Guacamole? Check

Chips? Check

Tortillas? Most tortilla are just corn and water…so check!

I like to put some beans, lettuce, tomatos, and avocado slices or guacamole in my burritos. Very yummy!

Hold the meat and cheese. It will still taste delicious but without the added calories and without the added yucky meat. Funny enough, taco bell will be extremely¬†accommodating. It is the vegan’s fast food. Their Veggie Cantina Bowl can be made vegan – just hold the cilantro sauce, which might have some dairy. It tastes phenomenal! Their guacamole is great too! You can replace beans for anything! You like their tacos? replace beans for meat, you like their gordita crunch? no meat just beans and beans between the tacos. It really makes your hectic days a lot easier to handle!
