Mandarin Orange Crispy Chick’n Meal

Tonight we had Gardein Mandarin Orange Crispy Chick’n with some Kale salad, and hummus.

YUM!

You can find this brand in the meat frozen isle. It’s very easy to make. The meal comes with a little pouch with the sauce and you just cook it with the chick’n. Then I added some raw kale with some salad dressing and hummus. Dinner in minutes.

Latin Food Restaurant

Coming from a hispanic background, everything that has to do with latin food, also has to do with meat. Well, with a little bit if creativity and by asking some questions, it doesn’t have to be that way.

When we go into latin restaurants, I immediately go to the ‘sides’ section and start looking at those. You might find a side salad, plantains, yuca, black beans (usually made vegan but ask if it was cooked with meat), rice, bread, etc. My usual meal is black beans, rice, and plantains.

We also went to a fast latin food restaurant called ‘Pollo Tropical’ which literally means Tropical Chicken, but don’t let the name fool you! They have a vegetarian dish. You can choose between rice, rice and beans, yellow rice, rice and lettuce, with corn, grilled onions, tomatoes, and grilled peppers. They also have some yummy sauces such as guava bbq. If you have one near your house, you should check it out!

Beefless Tips Dinner

Tonight we had some beefless tips! Gardein brand makes the best beefless tips. They are delicious and oh so easy to make!

I started with a pan and some olive oil. I opened the package and added the beefless tips to the pan along with some “Very Very Teriyaki Soy Sauce”. Let that simmer on its own, no other ingredient is needed.

I then steamed some veggies, if you have not gotten yourself a steamer, you seriously need to get one ASAP! I steamed some mushrooms, broccoli, asparagus, and some onions.

I also had a side of salad, which I flavored with the sauce from the teriyaki sauce, and some microwave rice.

YUM! and super easy!!

We bought a steamer!

We bought a bamboo steamer. It is a 10 inch round steamer with two levels for all your steaming needs.

You need a pot that is about the same diameter of the steamer (or a bit smaller). You put the steamer on top of the pot and let the steam of the water work on your veggies.

You can steam all sort of veggies and tofu. We are so excited with it!

My boyfriend made the same pink sauce they use at Benihana or Samurai, of course it contains mayo so I couldn’t eat it, but we are working on making it vegan with vegannaise. I dipped my veggies in ginger dressing (the same as the salad dressing) and it tasted awesome!

You can get a bamboo steamer online, at bed bath and beyond, or an oriental market (it’s cheaper there). It will usually cost you between $15-$20. Not bad for healthy and delicious veggies at home!

Berry Salad

I tried recreating the salad I was so excited about from Panera Bread.

I started with some greens, added blueberries and strawberries. I then added some Daiya cheese, carrots, a 100 calorie pack of guacamole, and some raspberry merlot vinaigrette. I also added some gardein chik’n scalopini which I sauteed in a pan with some vegan butter. I then added some guacamole!

It was really good and had nothing on the Panera salad! Very easy to make and the only thing I had to cook was the chik’n!

Rocco’s Tacos Mexican Food

We had dinner at this place with some friends. It was delicious!

We had the guacamole as an appetizer. It was really yummy!

I had the mushroom tacos “no cheese please!” (grilled mushrooms, lettuce, tomato, and a tomato sauce). It came with yellow rice and their ensalata mixta (greens, balck beans, corn, and a yummy dressing.

My boyfriend had their vegetarian enchilada. He enjoyed it very much. The enchiladas were filled with cheese (he eats cheese), carrots, zucchini, green peppers, onions, mushrooms, and other veggies. It came with yellow rice and refried beans. He said it was different because he had never had the enchiladas with veggies but he really enjoyed it.

Overall, a very good place and good vegan options!
